What types of honey do you offer?
We offer a range of pure, raw honey including our Pure Cambridgeshire Honey, our Pure Cambridgeshire Soft-Set Honey and our unique chilli infused Pure Cambridgeshire Honey.
Is your honey raw and unpasteurised?
Yes, absolutely! Our honey is simply filtered using a combined coarse/less coarse filter under gravity having been extracted by spinning the frames of honey. Our honey is the same as if it were straight from the hive, less the bits of wax and maybe the odd bee leg!
All our honey is unprocessed, unpasteurised and free from additives to preserve its natural enzymes, nutrients and the authentic flavour of the local flora.
Why has my honey crystallised?
Honey is complex. It is about 16 to 20% moisture and c. 80% natural sugars (mostly glucose and fructose), along with tiny amounts of pollen, propolis, enzymes and other natural goodies.
Here is where it gets interesting - different plants produce different nectars. That means not only does honey have unique flavours, but the sugar makeup varies too. Some are high in fructose, others are high in glucose.
Why does that matter? Fructose keeps honey runny for longer, while glucose makes it crystallise more quickly. Honey from oilseed rape and ivy can turn solid just days after extraction, while blackberry and lime tree honey stays liquid for a long time.
Pollen plays a role too as it speeds up crystallisation. Honey that has not been heavily filtered, which is our approach, will granulate faster.
So next time you see your honey crystallising, do not panic - it is is a sign you have got the real deal!

Our honey is sold in glass jars with metal lids, both of which are recyclable.
